Saturday Stirrings

My friend, Carol, over at I Throw Like a Girl, does Saturday Stirrings. I love to read her blog and enjoy the recipes, etc.

Well, we are at our Weekend Parsonage. I have very limited access to anything - like recipes and the internet. I have mentioned many times that I bring my laptop here and I just hope and pray that someone close who has wireless internet, is connected... I can link up to it... It all depends. Most of the internet up here is dial-up, so it is EXTREMELY slow... then, you add wireless and the wind, sun, clouds, etc... and it can be very interesting and character building!

This being the third weekend of the month, I have two covered dish dinners... and, since I have a gas oven that I am clueless about, I am again LIMITED. So, I bring things that I can mix together easily and quickly and do not need to be cooked in any way.

This weekend, I'm serving up .... Green stuff... This actually happens to be one of my hugsum's favorite dishes. When the kids were all at home, we had this at least once a week. It is always a good fill in that is quick and easy.

So, without further ado... here is the famous;

Green Stuff

1 large can of crushed pineapple in it's own juice (not drained)
1 box of pistachio pudding mix
1 carton of Cool Whip (thawed)
1/2 cup chopped nuts (optional)

In medium bowl thoroughly mix pudding with pineapple. Stir in Cool Whip until well mixed... add nuts... refrigerate.
Serve in pretty bowl.

Okay, so it's not earthshaking - but it is good!

That sounds good. And I love the name. I will make that soon, but leave out the nuts if my kids are around. They don't like nuts. :(

Ha, ha. That is one of my favorites too! I call it Green Fluff! Because it looks so fluffy when you get it all mixed together. YUM!
