Fall into Flavor - Pineapple Casserole


Today I'm having fun with Linda at 2nd Cup of Coffee and joining her in the recipe exchange. This is one of our Fall Family Favorites... Pineapple Casserole.

We get to go to lots of covered dish fellowship meals. I'm always looking for something different and delicious to "wow" the crowds... unfortunately, this is not usually the case.

In Georgia at almost every one of these blessed events there is at least one of these side dishes presented. It happens to be one of my favorite and I also fix it at home and when company comes, too.

When we moved last year to our new appointment in Southwest Oklahoma they were very interested in the different styles of cooking and asked me to bring something distinctly "southern".

Because of the way our schedule was, it meant that I took my dish to the 9:30 service and left it. We had another service in another town at 11:00 and after that, we returned for the dinner.

When we got back for dinner I was going down the line I was looking for my casserole. I had told several people and asked that they made sure it was out. Well, I didn't see it anywhere! I asked about it and they said they had served it... Sure enough, I had even picked up a plate of it myself! They didn't know what it was and thought it was a dessert and had put it out on dessert plates!!!!

When I acted confused, (like they were REALLY crazy), they asked what it was. I said, "Pineapple Casserole, we eat it as a side dish, not a dessert."

They then took a plate of the casserole and gave one to each person saying, "this is a vegetable, not a dessert!" I watched people take a taste and then asking each other, "WHAT is this?"
Then they'd say, "SHE said it was a VEGETABLE... I've never tasted any vegetable like this, it tastes like a dessert!"

We all had a good laugh as I tried to explain that it is a side dish...

Anyway, you can eat it any way you like, but in Georgia and at MY house, it is a side dish!


PINEAPPLE CASSEROLE

1 can large crushed pineapple in it's own juice, not drained
1 cup sugar
1 tablespoon flour
1 cup sharp cheddar cheese, shredded

Mix and put in greased small casserole dish.

Top with:
1 sleeve Ritz crackers (crushed)
1 stick butter melted.

Place topping on mixture and bake at 350 for 30 minutes or until bubbly.

Enjoy!

Oooo-weee, this sounds good. I think it might be in the same category as candied yams or sweet potatoes, as we call them in Indiana. It's a side dish, but it's good enough and rich enough to be dessert. Thanks for sharing and for the story, too!

This sounds delightful!!! I am so excited about all these recipes. And where I work everyone is all about the content YUK! boring! Not me, I need FLAVA! (well maybe my hips don't)

I love this recipe!!! It is so good!

Thanks for visiting my blog! The soup base is located with all the dried soup mixes..usually on top shelf. It comes in a jar and has a kind of spongy texture. The noodles can be found in the frozen section at most walmarts or grocery stores.

This sounds like a winner. A whole stick of butter... oh my, no wonder it's so good. A cup of sugar and a stick of butter and the rest is details. LOL.

Wow! Sometimes I can almost imagine the taste of something when people describe it...I'm totally clueless on how this would taste.

But I think I'd like to try it. I like all of the things separately, and who knows? I might have a new favorite side dish. Thanks for stopping by. I appreciate the kind words.

This is a casserole that ALWAYS trips me up at those covered dish dinners. I take a serving, take a bite - and realize it is NOT the hashbrown casserole I thought it was! Since I don't really care for pineapple, that is always a shock.

But I'm sure it is delicious - if you like pineapple!
